The Food of Sardinia: Italian Provincial Cooking


The BCAE's icon of Italian cookery, Diane Manteca, wants to take you off-the-beaten-path to explore the food of the magical island of Sardinia! Known for its unique terrain of coastal seaside cliffs and an interior of rocky mountains and valleys, Sardinia offers equal doses of incredible seafood, porky delights from roaming wild boars, and some of the greatest sheep's milk cheeses in the world. Forget the same old spaghetti and meatballs, and learn to cook some of Italy's greatest dishes, definitely not found at your local Olive Garden! You'll make Minestra di Ceci e Finocchi (Chickpea & Fennel Soup), Fregola ai Gamberi (Couscous with Shrimp), Cotolette di Maialle alla Sardinia (Pork Chops, Sardininan-style), Zucchine in Cassarola al Forno (Baked Zucchini Casserole), and Sardinian Orange Raisin Cookies.
