Why is the humble eggplant so intimidating?! Gevevieve Forde wants to demystify this incredibly versatile ingredient that's responsible for some of the greatest dishes on the planet. We often think of eggplant (also called aubergine) as a vegetable because we find it on so many savory dishes, but it's actually a tropical fruit! There are many different varieties that allow us to make much more than Eggplant Parmesan! Smoked, pureed, roasted - each manipulation of this fruit allows us to experience all this delicious fruit has to offer.
