Chef Michael Morway joins the Trillium Brewing Company team as Executive Chef at the flagship restaurant and brewery in Boston’s Fort Point neighborhood. Chef Morway and Trillium founder JC Tetreault share a similar obsession – an unparalleled passion for ingredients and flavor profiles, both of which are showcased in the distinctly developed menu at the restaurant.
A New England native, Chef Morway finds inspiration from the bounty of the season. For over a decade he’s been forging relationships with local farms, utilizing the freshest ingredients available. Prior to joining the Trillium team, Chef Morway helmed the kitchen at various restaurants around Boston and owned and operated NOSH in his hometown of Plymouth, Massachusetts where he built a strong network of farm partners and became intrigued by the art of brewing through his frequently hosted beer dinners. At Trillium, it’s all about creating experiences, and Chef Morway’s menu enhances the brewery visit with complementary seasonal dishes that mirror the quality product that Trillium is known for.
Chef Morway’s motto is simple: Quality ingredients shine by taking risks and challenging culinary trends. When he is not in the kitchen, Chef Morway is raising his son, Brady, and growing his impressive tattoo collection of all-things food.
